That is perfectly polite. However, there is not too much variation.
Vegans don't eat anything from any animal source.
Vegetarians sometimes eat eggs and dairy (milk, cheese, etc.) but most don't.

That would be fine, but if you want to be extra-polite, you could say "may I ask what dietary requirements you have?"
