Both are correct, it just depends on if you want to talk about specific beaches you saw (I saw *the* beautiful beaches) or beaches in general (I saw beautiful beaches)

Though it may be correct and understable what you are saying in a text, if you tell it to someone it will seem that you are not talking about beaches, but bitches which is an insult. Instead you could say "There were beautiful beaches"
