It depends on when you start reading during the week.
Your sentences suggest that you didn’t read on Monday, you were reading on Wednesday, and you didn’t read on Sunday because you had already finished the book.
So you could say on Monday “This week I am reading”, or you could say that on Saturday if you were still reading. Similarly, if you read the book really quickly and finished it on Wednesday, you might say “this week I have been reading...” on Wednesday.
