Their is no real difference. It's just two different ways of conveying the same idea.
I think of you a lot.
I think about you a lot.
We think of each other constantly.
We think about you constantly.

It's the same, apart from you don't say "I think of you" on its own. Like it has to be at the end of a sentence, an example: when I see this I think of you. But mainly people say "I think about you"
