2 is not correct.
1 and 3 are both correct, but technically say slightly different things:
"an apprentice mechanic" is a mechanic who is an apprentice.
"a mechanic's apprentice" is someone who is an apprentice to a mechanic (the mechanic is the apprentice's master).
Usually, a mechanic's apprentice is also an apprentice mechanic, so they mean the same thing. However, (1) puts the focus on the person who is the apprentice, (3) puts more emphasis on the master (who is a mechanic).
