Hii, first it's not correct to say I daid funny or embarrassing because in Englsih we don't say it this way. Funny is just an adjective for sth. It's not a noun.
So we say she said something funny
So funny here is an adjective for something = noun
In the mentioned sentence above:
I said something funny
U say something funny but u don't say funny
Because funny is not a thing. It's just an adjective for sth.
U got what I mean?

We usually say the adjective after something not before it.
So u say something funny
Not funny something.
But if u want to use funny before u can say:
Dave said a funny joke
Because in English the adjective comes before the noun.
