If you are talking about physical characteristics:
"prickly" usually suggests that something has many tiny sharp or painful spikes or hairs all over it (such as many types of garden weeds do), and there is probably no way to touch it without getting poked.
"thorny" suggests that something has larger, sturdy sharp spikes ("thorns") all over it, such as a rose. It is often possible to find ways to grab such a thing which can avoid the thorns, if you are careful, but if you are not careful you will probably get poked.
"spiky" just says that something has many sharp parts that stick out in various directions (but nothing about what the sharp bits actually are). It can also just describe the appearance of having many parts that taper to thin tips, even if they are not actually sharp (for example, saying somebody has "spiky hair" or a plant having "spiky leaves").
"prickly" and "thorny" are mostly used when talking about plants (which grow sharp hairs or thorns on their bodies). "spiky" is often used to describe all kinds of things, though, not just plants, if they are something that has a lot of pointy parts sticking out.
These words are sometimes used metaphorically, too. In that case:
"prickly" is sometimes used to describe people. It means that the person is not very friendly and may be easily annoyed, etc.
"thorny" is sometimes used to describe a situation or problem, meaning that it is difficult to resolve or requires special care when dealing with it. (Similar to how thorny plants require special care to make sure you do not get injured when dealing with them)
("spiky" pretty much always just describes physical appearance, and is not really used metaphorically)
