"It's interesting to me "の方がより一般的です。
"Interesting for me"は一般的に、動詞の不定詞が続かないと正しくなりません。単に "It's interesting for me. "だけではダメなのです。
しかし、"It's interesting for me to hear" は正しい文となる。
