"Vision loss" is more common, but they have the exact same meaning

In other languages, "Loss of vision" is the required word order. However, in English, we're allowed to get rid of the "of" if we swap the words
Carro de mamá = car of mom = mom's car
It's the same, but "vision's loss" sounds weird, since the vision doesn't have ownership.
So it's just "Vision loss"

You can't do it for every use of "of."
But most of them like this use, yes you can. "Vision loss" can always be used instead of "loss of vision"

We can't swap it with "For," so your first three examples don't work
Love of children -> children's love
The love of children -> the children's love

"The children's love" means exactly the same as "The love of the children"
You can use either word order in any situation
"el amor a la pareja"
The couple's love
The love of the couple
Both translations mean the same thing
I think a specific example where "of" is better, would be the phrase "For the love of God!"
"For God's love" is grammatically correct, yes, but it sounds unnatural. This is because "For the love of God" is a specific phrase that we say.
"Bill of Rights" should also keep "of" even though "Rights Bill" is grammatically correct, because "Bill of Rights" is the specific name of the document

You can't do it with set phrases. These are things like "table of contents."
Unfortunately you just have to see a lot of English to know what our set phrases are, as I can't think of all of them
You can't use it when "of" is being used like this:
think of
all of
It's only when it's used like this:
[noun] of [_]
Loss of [_]
There may be a few uses I'm forgetting, too. It's not something I was taught a specific rule for, I only know this because I'm a native speaker

Honestly, I think unfortunately you just need to listen to or read a lot of English to get used to understanding the pattern yourself.
"Parsley benefits include..."
"Parsley's benefits include..."
"Benefits of parsley include..."
All of these are acceptable
"The parsley benefits are..."
"The benefits of parsley are..."
The second one is definitely more common, but this is something I only know because I've heard English a lot
"Her vision loss was severe"
"Her loss of vision was severe"
The first one is more common, but both are correct
"Her loss of vision caused her a lot of pain"
"Her vision loss caused her a lot of pain"
Here, both options are equally acceptable
It's impossible for me to give you a rule that works for every situation, you really do just need to read a lot of English or watch a lot of content in English
