"Sunday it is" sounds more old-fashioned, and no one really says it that way.
Most people will say "It it Sunday" and even more will say "It's Sunday". (A contraction of It and Is becomes It's)

I see, so ”Sunday it is”
has a nostalgic sound like reading a fairy tale?
Or does this sound classical?
or maybe it's just an anachronistic expression?

You can say "Sunday, it is" to emphasize Sunday and it adds a little personality to the statement.
For example something unexpected happens, or you change your mind for the day, so you might say that to yourself or others

We finally made a decision. Sunday it is.
like this?
if the decision has made in the past, do you say like"Sunday it was"?
We have finally made the decision. Sunday it was
=It was Sunday that we finally made a decision.
Do I understand it properly?

Sunday it is sounds fine. Sunday it was sounds unnatural.

@minmin119 "Sunday it was" sounds a bit like British grammar. Quaint and probably why Americans don't use it as far as I know.
So yeah sounds like you're getting it
