Olives are cold pressed without using heat or chemicals for virgin olive oil. As @mew98 says, not refined. Virgin also has the meaning of "untouched."
Virgin forests, virgin snow, etc.

I had to look that one up. Apparently, the acidity level determines the classification of which cold pressed oils are virgin or extra virgin. Extra virgins are less cranky. :)
