Also correct: it’s open on weekdays, except Wednesdays
But in causal conversation if you said “it’s open every weekday, except Wednesdays,” no one would notice. That’s why the other answer says both are correct

Because Wednesday is only one day in the singular group of weekdays. It is singular.
Conceptually you are not talking about multiple weeks on the calendar, you are talking about the days of a work week.
