No, you don’t repeat it back. You say “See you then!” ‘Then’ in this context refers to other persons specified statement in agreement.

In your question, if you "have to"... Well, English is very flexible and you can answer in so many different ways! Probably @DsChubba 🙂 has said the most suitable and proper reply but you don't have to limit your answers to standard ones. For instance:
• See you on Monday...
→ So we will.
→ Ok, till Monday then.
→ On Monday, I hope...
→ On Monday suits me fine.
etc.
It depends on context mood, relationship...
