안녕!
Both are correct, but I would leave out "from you" in both. You dont need to say "from you" because we already know the experts opinon is from them.
The second sounds more professional in my opinion. "As an educational expert, I would like to hear your opinion on XYZ"

But I think that there is a difference in meaning between 1 and 2 in that sentence 1 could mean I would like to hear your opinion as you are an educational expert, but sentence 2 could mean that I would like to hear your opinion as I am an educational expert.

@per999 oh true! That is a good point! If you did not establish earlier in the writing that they are the expert and you are not it could be taken that way. Yes.

Q2) As for sentence 1, is there a possibility that a native English speaker sets off "as an educational expert" with a comma when writing sentence 1 so that sentence 1 can mean that I would like to hear your opinion from you as I am an educational expert, but not that I would like to hear your opinion from you as you are an educational expert?

Q1) I think it would be very unlikely to be taken in the sense that you are the expert. It always depends on context. Most people will recognize they are the expert in questioning situations. Is this for a professor or an interview???
Q2) You would not include a comma in sentence 1. That would be grammatically incorrect.

Q3) Yes. It does imply that someone is the expert and someone is not. But usually the writer is not the expert.
Q4) No. It can again mean both. Think of it this way. To imply whether you are or are not the expert in the situation depends on what opinion you ask them about.
For example:
As an educational expert, I would like to hear your opinion on your last semester of classes.
This would imply you (the writer) are gathering data from the students (not the expert).
versus
As an educational expert, I would like to hear your opinion on your teaching methods for non-native students.
In this instance we understand that you (the writer) does not know his teaching methods or theories for students, making him the education expert.
Does that make sense? I hope I am explaining clearly. With the sentence alone we cannot determine who is the expert. We need context.
