Most Japanese people may use chopsticks well. But I can't use them.
When I ate oyako-don at lunch, it was so crumbly and hard to eat. If the restaurant had a spoon, I might have eaten, without a stress.
I need to practice how to use them.

I might have eaten (or: been able to eat) *without stress*.
"stress" is non-countable.
I also think it would be a little more natural to say "Most Japanese people may be good at using chopsticks, but I can't use them" at the beginning.
