Okay, I got it.
Can I use "I got it" in this context, meaning, "I'll do it"? Until recently, I thought "I got it" meant only "I understood", so I'm still unsure about using it that way. Is there another or a better phrase I could use in the example above, please?

Yes, "I got it" is a perfectly natural phrase here, but usually we would shorten it even more, to:
"Okay, got it."
Your interpretation is correct, "I got it" does only mean "I understood." However in this situation, you are saying "I understood what you want me to do, so I will do it." Thus "I got it" or "got it" works.
Other phrases you could use in this situation are:
"Okay, thank you."
"Okay, thanks."
"Okay, thanks so much."
"Okay, I'll do that."
"Okay, I'll make sure to do that."
