You would never use I'm gone.
I've gone = I have gone which is the present perfect of the verb to go.

I'm gone = I AM gone
I've gone = I HAVE gone
1. "I have gone to the shops"
in sentence 1, 'I have gone/I've gone' means the speaker has left to go the shops, or has returned from the shops.
"I am going to the shops"
"I have gone to the shops"
2. "I am gone if you do that again"
in sentence 2, 'I am gone/I'm gone' is the same as 'I will go', but this is a more informal way to say it.

@peterf I would say you can use 'I'm gone' in a colloquial sense? For example for dramatic effect. Obviously not to be used in everyday speech, and rather grammatically incorrect, but please let me know if I am wrong in thinking this haha

I am gone uses gone as an adjective not a noun.
