Helplessly is definitely the better word here.
"Impotently" is almost never used.
Between "as" and "while" -- You could use either in this case. It's hard to describe how to decide which is best. Here is a webpage that talks about it:

But I would not worry too much about it. You will be understood either way, and in time, you will learn to hear which one sounds better.
