The part of the hat that blocks the sun from your eyes is called a brim. A cap only has a brim in front. If the hat has a brim all the way around or no brim, it cannot be a cap.
Hat is the most general term. If you are not certain, say "hat". Caps are a type of hat.

@UnChef disagree with your first part.
While a baseball cap does fit that description, that is not what makes a cap a cap.
A cap is something that goes on your head that forms to the shape of your head*.
*baseball caps can be bigger but generally they have a head shape.
Examples of caps are:
Baseball caps, academic caps, wig caps, and even beanies(or woolies).
A cap IS a type of hat (generally).
The attached image is an example of different kinds of “caps”.

@ghostly_ I guess I was just thinking of the instances they would be most likely to encounter the word, good point. I will say, however, that I've never heard anyone refer to a beanie or knit hat as a "cap".

@UnChef understandable, and I totally get that, my first thought is baseball cap too. But in the interest of correct info I thought I should say something :)
Also yeah like no one calls it that, but it is technically a cap. You can find it in some older literature, but has completely fallen out of use in current times. (Like how I excluded night caps, because I don’t know anyone who wears those in modern day). You can see it used in some literature about a sailor, they might call it a “cap” because the term “beanie” wasn’t in use at the time.
