‘That’ refers to a specific thing, either already mentioned in the conversation or ‘that’ is used to point something out.
“Did you hear that?” “Could you pick that up?” “I didn’t know that about him.”
Whereas ‘it’ can be anything that doesn’t have a specific name.
“Is it okay if I go out?” “I heard it was really windy on Friday.” “It was quite loud but I managed to fall asleep.”
