You don't really say, "I've been on holiday" or " I was on holiday" but you could say, I've been on vacation or I've been on holiday break. ( And technically there really isn't a difference between those two. )

"I was on holiday" is a more normal phasing. We don't really say "I've been on holiday" in English because it implies a one-time event in the (distant) past, and doesn't sound very naturalistic.
