For these sentences, only "immersed" makes sense. "soaked in English" sounds like English is a liquid.
To make these sentences correct, they need to be changed a little. "I've soaked in a lot of English" or "I've absorbed a lot of English".
The difference is that these last two sentences mean you learned a lot of English. To immerse yourself in English means you have surrounded yourself constantly in English.
