A: "Skydiving is not so easy of a thing."
This sounds correct, and also more formal than if you used B.
B: "Skydiving is a not so easy thing."
This sounds less formal, and also a little awkward.
Personally, I would say:
"Skydiving is not an easy task."
This is most formal, but is most easily understood.
