As far as I know there are two cases of using "겠". First one is when you talk about yourself "하겠다", "가겠다" it means that no matter what you will definitely do it (while 할거에요 is not so definite). And second case is when you talk about something or someone but you, like "힘들겠다", "맛있겠다", "재미있겠다". In this case it means that you don't know for sure, but it looks like it's definitely hard\tasty\interesting. Somebody says that he's major is nuclear physics and you say "재미있겠다", you see a picture of pizza and say "맛있겠다", but it's not the same as just 맛있어요 because you haven't tried it yet. In all other cases you just use 거에요 when you talk about future, that's it. If you just want to talk about future it's better just to use 거에요 and you're never wrong

"먹을거예요" is honorific and "먹겠다" is not. You should say "먹을거예요" in normal.
