Which is used for a choice between a limited number of items, such as days of the week. What is used when the choices are somewhat limitless. Your understanding is correct, @Exquisitor . However in common usage most English speakers use them interchangeably and without distinction.

1 is more common when asking what day of the week is it today.
2 has the feel of doing something in the week and asking on which day it is taking place, though both sentences are similar.

@Tinamari based on what is taught to me, “which” is used when you need to identify something specific among a set of things (“which car is yours?” told in front of several cars), while “what” is used to identify the type or kind or quality of a given thing (“what car do you love best?”). so, I’d think that it should be more correct to ask “which day of the week is it?”, seeing that the week days form a set of things, where you have to select from... is there any plausible explanation of what seems to me like an oddity? or it’s simply an exception for this kind of questions?
