Don't worry, it's what I'm here for :) if they are the ones outsourcing it, that means they are the ones who are letting someone else do the work, therefor they cannot be the ones doing the work. Does it make any more sense?

something like "have them let someone else do the work". In general, what he's trying to say is that he didn't want his students to be writing during his lecture, he wanted them to be listening, so that part is just saying that his solution was doing the work for them, "videotaping it", thus the work was outsourced to him (if it doesn't make sense, please let me know)

@Mari_18: sorry! I'm a bit confused, I think I know the general idea, but does outsource mean to let someone else do your job? unfortunately I don't find that word in my dictionary: outsource

Yes! For example, when US companies have their products manufactured in China, where it is cheaper, it is called "outsourcing", because they are having other people do their work.

Not quite. What he's saying is that he didn't want his students writing during his class (probably because he would rather they focus on listening), so he did the work by filming the lecture, so that they didn't have to write everything down but could watch it again later instead.
