Sometimes words are written in katakana to give them emphasis or to make them stand out from the rest of the text.

As the usage of Kanji got lower, we probably have switched from Kanji to Katakan like so, 猫 to ネコ 向日葵 to ヒマワリ. Hiragana desolves into sentences, so it's easier to use Katakana for nouns.
