Could you help me to explain how to differentiate between " I am about to say" and " I was about to say".

"I am about to say" means you will do it sometime in the near future.
"I was about to say" means something you were going to say but didn't, maybe because you were interrupted.
I haven't really heard people say "I am about to say", but "I was about to say" is quite common.
